Ganjam

Ganjam's dairy is small-herd by default rather than by positioning. That caps how much milk is available at once, which caps the batch size of the ghee, which is why the bilona line is genuinely small-batch instead of describing itself that way.

Bilona takes a day longer than machine separation and produces less from the same milk. On a small herd that trade is affordable. At scale it would not be, which is roughly why most ghee is not made this way.

Jaggery and black gram come from the same southern belt.
