Groundnut Oil

Pressed slowly in a wooden ghani, which keeps the temperature down through the press. Nothing is refined, bleached or deodorised afterwards, so what reaches the bottle still smells like the nut it came from.

Groundnut for these lots is aggregated through four Self-Help Group clusters across the Balasore coastal belt. Four clusters is what it takes to assemble a pressing run without a trader standing in the middle taking the margin.

Unrefined oil behaves differently from the refined kind. It clouds in cold weather, it settles, and it tastes of something. All three are the point rather than the problem.
