Mustard Oil

Kachi ghani means the first cold press and nothing else. No second pass, no heat applied to the cake to reclaim what the press left behind, no solvent. The pungency people either love or flinch at is the marker that none of that happened.

Mustard here is contracted with Sundargarh growers ahead of sowing, at a price fixed before anyone knows what the season will do. That moves the risk off the grower and onto us, which is the opposite of how the trade normally runs.

Sundargarh sits in the western belt, where mustard shares the rotation with kulthi and upland rice.
