In Sundargarh the contract comes before the crop. Mustard is committed ahead of sowing at a price fixed before anybody knows what the season will do, which moves the risk off the grower and onto us.
That is the whole mechanism. A grower who knows the price in advance can plan; a grower who finds out at harvest takes whatever the market decided in the meantime. Contracting early costs us the upside in a good year and is the only version worth offering.
