Ragi & Jawar Laddoo

Ragi and jawar are roasted, ground, bound with jaggery rather than refined sugar, and rolled by hand. It is the way the snack is made at home, produced at a scale that can leave the district.

That last part is the whole point. Millet usually leaves Gajapati as a raw sack at a raw sack's price. Rolled into a laddoo it leaves as a product, and the difference in what the collective earns is not marginal.

Made by a producer collective in Gajapati, an aspirational district where the processing now happens in the district rather than somewhere downstream of it.
